SHERBROOKE, July 7th 2026 — More than two years after a devastating fire forced its closure, Café Bla-Bla is preparing to reopen its doors following a rebuild that preserved the character of one of downtown Sherbrooke’s longest-standing restaurants.
The restaurant, a fixture on Wellington Street South since 1972, officially reopens to the public on July 8 after a soft opening for family, friends, and invited guests. Owner Maxime Poither said the project required an investment of more than $1 million and was driven by the restaurant’s importance to both his family and the Sherbrooke community.
While the interior has been modernized, Poither said the redesign retained many of the restaurant’s defining features, including its multi-level layout, French bistro atmosphere, and original character, while introducing larger windows and improved seating.
The reopening also includes a new beer garden-style terrace, developed in partnership with the City of Sherbrooke to activate a vacant corner created by the 2024 fire. Poither said the space is intended to encourage more activity in the downtown core during the summer months.
Looking ahead, Café Blah Blah plans to expand from evening service to seven-day operations, with lunch and breakfast service planned in the future.
